Abstract

The invention discloses a health care beer and a producing method thereof, belongs to the field of beer production, and particularly relates to a production method of a health care beer. The invention aims to solve the technical problem of providing a health care beer and a production method thereof. The health care beer is characterized in that the beer contains morchella esculenta polysaccharides. The production method of the health care beer comprises the following steps of: crushing raw materials, boiling wort, cooling and noculating wort, and carrying out primary fermenting and post fermenting. The production method is characterized in that morchella esculenta hydrolysate accounting for 0.001-0.07% of the total weight of the wort is added in the wort boiling stage. By skillfully dissolving the main effective components of the morchella esculenta into the beer, the beer has the good nutrition value and heath care effect of the morchella esculenta.
