METHOD FOR PRODUCTION OF PHELLINUS LINTEUS AND MANUFACTURING METHOD FOR KIMCHI USING THE SAME

Abstract

A method for obtaining a Phellinus linteus extract, and a method for preparing kimchi by using the extract are provided to increase the shelf life of kimchi and maintain its original taste longer. A method for preparing kimchi by using a Phellinus linteus extract comprises the steps of: (i) heat-treating 80~200g of Phellinus linteus powder (ii) mixing the heat-treated Phellinus linteus powder to 4L of water at 90 DEG C (iii) heating the mixture in an extraction tank at 100 DEG C for 6hr to obtain a Phellinus linteus extract (iv) mixing the Phellinus linteus extract with a kimchi seasoning and (v) mixing the mixed kimchi seasoning with salted kimchi ingredients. The method further comprises the steps of: filtering the Phellinus linteus extract obtained from the step (iii) by a 270mesh sieve to make Phellinus linteus powder secondly mixing the Phellinus linteus powder to 4L of water at 90 DEG C and secondly performing extraction in an extraction tank at 100 DEG C for 6hr.
