Abstract

PURPOSE: A method of cooking ginseng chicken soup(samgyetang) by heating a dressed chicken, carbonated water containing free carbon dioxide, glutinous rice, spices and herbs is provided. It removes almost all chicken odors, tenderizes the meat and provides a non-greasy taste.
