Abstract

PURPOSE: A method of making functional rice coated with a Chaga extract by coating prewashed rice with an extract of Chaga(Inonotus obliquus) is provided. The product is reinforced in [beta]-glucan and water-soluble lignin and has effects of improving immunity and reducing blood sugar levels.

CONSTITUTION: A Chaga extract is sprayed on prewashed rice and the rice is then dried with hot wind. The produced rice is reinforced in nutrients while containing original nutrients of rice without the destruction.
