THE METHOD FOR MAKING A SKATE RAY IN EFFECT USING PHELLINUS LINTEUS AND PRODUCT THEREOF

Abstract

A manufacturing method of skate aged with Phellinus yucatensis is provided to remove rancidity smell from the skate, and evenly ferment the whole part of skate at the room temperature, thereby softening the flesh and improving the taste of aged skate. The manufacturing method of the aged skate comprises the steps of: (a) drying Phellinus yucatensis to within the water content of 5% and pulverizing it to 2 ~10 micrometer (b) mixing the Phellinus yucatensis powder, sugar and drinking water in the weight ratio of 10: 2: 30 (c) mixing the mixed material with the deep seawater with salt degree of 1-3% in the weight ratio of 100:1 to 100:10 at 19-28 deg. C for 5-10 days (d) filtering the fermented product (e) removing the internal organs from the skate, washing the skate and removing the water from the skate (f) dipping the prepared skate in the fermented solution of Phellinus yucatensis prepared in the step (c) for 0.5-3 hours, and removing the moisture and aging the skate in a pot at 15-25 deg. C for 3-9 days.
