Abstract
PURPOSE: A composition containing Tremella fuciformis extract is provided to improve yield and to recover neural cells.
CONSTITUTION: A method for preparing Tremella fuciformis extract comprises: a step of performing hot water extraction of Tremella fuciformis under an acidic condition and a step of treating enzyme to the extract. The acidic condition is pH 2.5-pH 3.5. The enzyme is cellulase, pectinase, lignase, glucanase, or hemicellulase. A food composition for enhancing memory contains the extract as an active ingredient.
